Blue Oyster

The workhorse. Deep savoury, faintly aniseed, holds a hard sear without weeping. Grows in tight fan clusters.

Best for

Searing, roasting, mushroom "bacon", stock

Lion's Mane

Shredded crab or lobster texture and a sweet, mild flavour. Browns beautifully in butter; the most-requested species we grow.

Best for

Crab cakes, cutlets, pan-searing whole

King Trumpet

Thick single stems with a dense, snappy bite. Cross-cut into rounds it behaves like a scallop and takes a glaze.

Best for

Scallop cuts, grilling, skewers, braising

Pink Oyster

Smoky and bacon-adjacent when cooked hot and hard. Vivid pink raw, fading in the pan. Short shelf life — cook it fast.

Best for

Carnitas, tacos, high-heat sauté

Shiitake

Thick donko-style caps off oak-hull blocks. Meaty, umami-heavy, the best stem-to-stock ratio of anything here.

Best for

Dashi, ramen, roasting, XO sauce

Chestnut

Speckled cinnamon caps, crisp stems, nutty and robust. Keeps its texture in a wet dish better than most.

Best for

Risotto, stir fry, pickling

Pioppino

Dark caps on long cream stems with an intense forest flavour. The species chefs ask for by name and rarely find fresh.

Best for

Pasta, game, red meat, hot pot

Golden Oyster

Bright yellow, delicate, faintly cashew-sweet. A plate-stopper for garnish work; fragile, so it travels short distances only.

Best for

Garnish, quick sauté, market retail

Maitake and beech run seasonally alongside the nine. Ask about a species you want on the menu — a reserved block run takes about six weeks to reach your kitchen.
