Fresh, dried, extract or gummy?

Why the format matters more than the species

People choose a functional mushroom by name — lion’s mane, reishi, cordyceps — and then buy whichever format is nearest. That is backwards. The format determines whether you are getting a meaningful quantity of anything, and the differences between formats are far larger than the differences between species.

Fresh

What it is for: eating. Fresh gourmet mushrooms are food — flavour, texture and the nutrition covered in are mushrooms good for you. Lion’s mane is the one functional species that is genuinely excellent to cook.

What it is not for: dosing. The active fractions people are interested in are locked inside chitin cell walls, and the quantity in a portion is not comparable to an extract. Cook it because it is delicious; that is a sufficient reason.

Note: reishi is not edible fresh in any normal sense — it is woody and intensely bitter, and fresh antler reishi is sold for tincture-making and display.

Dried

What it is for: storage, cooking and tea. Drying concentrates flavour, keeps for a year, and for reishi and chaga is the standard form for making a long decoction. Dried mushrooms also make powder, which is the most useful thing in our own kitchen.

The honest limitation: plain dried mushroom powder in a capsule is still whole mushroom with chitin intact. It is a food product, priced and labelled as a supplement.

Hot-water extract (decoction or tea)

What it is for: polysaccharides, including beta-glucans. A long simmer — an hour or more, not a steep — pulls water-soluble compounds out of the cell walls. This is the traditional preparation for reishi, chaga and turkey tail, and it is a real extraction rather than a gesture.

Dual-extracted tincture

What it is for: the fullest extraction, and the only format where a dose is meaningful. Hot water pulls the polysaccharides, alcohol pulls the triterpenes, and the two are combined. For reishi especially, the triterpenes are a large part of the point and water alone will not get them.

If you are buying a functional mushroom product intending an effect, this is the category to buy in — and the label should state species, plant part, extraction method, ratio and beta-glucan percentage. See beta-glucans explained for how to read those numbers.

The test of a serious product: does the label tell you the species in Latin, the part used, the extraction method and the beta-glucan percentage? If not, you are buying packaging.

Capsules

Depends entirely on what is inside. A capsule of dual-extracted powder is a legitimate delivery format. A capsule of ground mycelium-on-grain is mostly grain. The word “capsule” tells you nothing — read the label for extract ratio and whether it is fruiting body or mycelium.

Gummies

What they are for: compliance. A gummy someone actually takes daily beats a tincture in a cupboard, and that is a real argument. But be clear-eyed: gummies have limited room for active ingredient once you account for sugar, gelling agent and flavour, and doses are typically well below what tinctures deliver.

Fine as a habit-forming format. Not the format to choose if you are taking the research seriously.

Mushroom coffee and blends

Usually coffee with a modest amount of mushroom extract added. Enjoyable, and often a genuinely nice drink. Covered honestly on the mushroom coffee page.

What we sell, and why

We are a farm. Fresh mushrooms are the product we believe in most, dried is how we handle surplus and give you a year of flavour, and the functional line exists because it is what happens to harvest that would otherwise be composted. We would rather undersell that line than make claims we cannot support — which is the whole posture of this cluster.
