This board is written on Sunday night from the grow rooms, not from a catalogue. If a species is on it, it is in a fruiting chamber in Longmont this week. If it isn’t, we won’t pretend otherwise — you’ll see the week it’s coming back.

Harvested to order the morning of delivery — never picked into inventory.
Wholesale per-pound pricing shown at the 10–24 lb tier. See all volume breaks · retail and market prices are on the fresh mushrooms page.
The board goes up and the list goes out — email to home cooks, a text to kitchens with species, pounds and prices. You have until Monday morning to decide.
Orders close and the week's harvest plan is locked. Limited species are allocated in the order requests arrived — kitchens with standing orders are filled first, always.
Cut before dawn, packed in the cooler, on your route that morning. Every box carries the species, the weight and the time it came off the block, written on it.
| What Happens | What We Do | What You Get |
|---|---|---|
| A species under-fruits | You get a call or text before the route leaves — never a surprise in the box | A substitution you approve, or the pounds credited |
| Two species come in heavy | Standing accounts are offered the overflow first at the next volume break | Extra poundage at a lower price, if you want it |
| Quality isn't right | It doesn't leave the farm. Nothing marginal gets packed to make a number | Fewer pounds, never a bad box |
| You need it off-cycle | Friday second harvest covers weekend service in Zones 1-2 | A Friday top-up, ordered by Thursday noon |
This substitution policy is the whole reason kitchens leave a broadline distributor. It’s published here so you can hold us to it.
Menu writing needs more than a week of visibility. This is what is already in colonisation, so you can plan a special around it.
| Week of | Coming into flush | Tightening up | Total lb |
|---|---|---|---|
| 8 Sept | Lion's mane peak, king trumpet | Pioppino, chestnut | 191 |
| 15 Sept | Golden oyster returns, blue oyster second flush | Pink oyster (block turnover) | 205 |
| 22 Sept | Maitake first run, shiitake heavy | Lion's mane between flushes | 218 |
| 29 Sept | Chestnut, pioppino back in volume | King trumpet (reserved allocation) | 212 |
Forecast, not a promise — biology moves a few days either way. Reserved blocks for a named dish are the way to make a species certain; ask Scott about a standing allocation.
Species, pounds and prices texted to your phone on Sunday evening — before you write Tuesday’s menu. No newsletters, no stories. Just the list and the cutoff.
Sunday text plus one email. Kitchen contacts only — we never share the list.
